These are a new family favorite and super easy to make!
I first made these over the holidays but they are so good, they deserve to be featured year round.
You’ll need:
* 2 Eggs
*1 Lemon
* 1 Tablespoon of Cornstarch
* 3/4 Cup of Powdered Sugar
[If you prefer larger cookies, you won’t need as much powdered sugar]
* 6 Tablespoons of Melted Butter
* 1 Box of Duncan Hines Red Velvet Cake Mix
Preheat oven to 375 degrees. Mix the powdered sugar and the cornstarch together in a bowl.
In a separate (mixing) bowl, hand mix the eggs and butter.
Add the zest of one lemon and then the cake mix. Mix all ingredients together until batter is smooth.
Roll batter into balls and cover completely in the powdered sugar. Move to sprayed cookie sheet.
(Because of the texture, I find it much easier roll the batter using 2 spoons)
Bake for 7-9 minutes depending on oven.
